Pumpkin, Butternut & Sweet Potato Pancakes

These are my more daring Pancakes, and probably the last I will post for a while (I've kinda done a lot with Pancakes lately).  The following 3 recipes came from playing around starting with the Sour Cream Pancake recipe & replacing ingredients… I encourage you to also play around with your recipes & change them up from time to time, it keeps things interesting… at the very worst you might get some odd results, otherwise what's it going to hurt to try?


Pumpkin Spice topped with cooked Pears & Bananas
Pumpkin Spice Pancakes

Ingredients:
  2 cups cooked/mashed pumpkin
  1 cup Egg Beaters
  3/4 tsp salt
  1 tsp baking soda
  1 Tbl sugar
  1 cup all-purpose flour

  2 tsp cinnamon (suggest Penzeys Vietnamese)
  1 tsp ginger
  1/4 tsp cloves
  1/4 tsp freshly grated nutmeg (or 1/2 tsp ground nutmeg)

Butternut topped with cooked Pears & Powdered Sugar

Butternut Spice Pancakes (took Pumpkin recipe, changed to Butternut squash & modified spices)

Ingredients:
  2 cups cooked/mashed butternut squash
  1 cup Egg Beaters
  3/4 tsp salt
  1 tsp baking soda
  1 Tbl sugar
  1 cup all-purpose flour
  2 tsp allspice

Sweet Potato & Oats topped with Banana and Sugar Free Syrup
Sweet Potato & Oat Pancakes (took Pumpkin recipe, changed to Sweet Potatoes & used Oats instead of Flour)


Ingredients:
  2 cups cooked/mashed sweet potato
  1 cup Egg Beaters
  3/4 tsp salt
  1 tsp baking soda
  1 Tbl sugar
  1 cup quick oats
  2 tsp cinnamon (suggest Penzeys Vietnamese)
  1 tsp ginger
  1/4 tsp cloves
  1/4 tsp freshly grated nutmeg (or 1/2 tsp ground nutmeg)

All these recipes make 4 large or 12 small pancakes.


Cooking Directions (Pancakes):
Wisk all ingredients together in a bowl.  Wipe/spray griddle/skillet with oil, put on Medium heat (large burner), wait until a drop of batter sizzles on the griddle.  Unlike traditional pancakes you aren't likely to see many (if any) bubbles on these Pancakes, so use your judgement (if a pancake veteran) or peek (if a pancake novice) to see when its time to flip.



Toppings: 
For the cooked pear & bananas (top photo) I diced up both, put them in a small non-stick saucepan, and cooked them until the fruits were well warmed.
For the cooked sliced pear (middle photo), I sliced up the pear & cooked it in my (very small) microwave for 1 1/2 minutes.
Have fun & play with toppings… use fresh or cooked fruit, syrup (there are some great sugar free options), powdered sugar, etc… use your imagination!!
