Hi friends, I hope that you're finding some good ideas for light food selections here… I'm not posting as much these days because I'm not coming up with much that's new - I've got things pretty much under control for myself. That said I will continue to post, but probably not as often as I have in the past.
I did do something today that may be helpful, I know it will be helpful for me… I did some re-organizing, especially in the Dinner tab, but I added lots of photos in the various tabs… check them out, I think you'll find them easier to navigate - I know I will.
I'm starting a home-based business, and when I first started this blog I was thinking I would be creating a cookbook… but things have changed and I've gone a completely different direction. If you're curious check out my blog named An Artful Romp (AnArtfulRomp.blogspot.com)… I hope to have items for sale sometime in the near future - actually I have a few items ready already, but I'm finishing with setting up the "business" end of things :)
So, I'm going to be busy with my new business, but I'm going to keep my blogs (I have 5 - I think my Son has decided I've gone over the edge), the links to those blogs are on the right (if you're on a full-sized web page).

A Sunny Start on a Cloudy Winter morning...
I know it's not Winter for everyone out there, but here in Minnesota we have a couple feet of snow on the ground & things are just starting to melt… don't get me wrong, we'll still get more snow yet this year, its just that we will have days warm enough to melt snow (at times).
This morning it was cloudy, so I made a point of starting my day on a Sunny note… ok, enough of being silly… today I had some of my Cheesy Eggs (sometimes I call them Creamy Eggs), but I decided to top them with a good Salsa (Tequila Lime Salsa from Robert Rothschild Farms)… YUM!! Add some Orange Wedges and I almost thought I was back home in Southern California (oops! my roots are showing!)…
Then what happened? Why the Sun came out of course!! (disclaimer: Sun coming out not guaranteed by consuming this breakfast)

What's For Lunch?
It's Thursday, and Thursday night is Date Night with my hubby, which means I'll be eating a high calorie dinner… so… I kept breakfast small (calorically) but filling & wanted to do the same for lunch… I dug around a bit in the fridge and this was the result…
Mock Spaghetti - made with a fresh Tomato sauce on top of cooked Spaghetti Squash.
I cheated, I already had cooked Spaghetti Squash left over from a couple nights ago… but you can cheat too and cook it up in advance :)
Once the sauce was made (I'll explain that next) I just heated up my Spaghetti Squash, put the sauce on top, and voila!!
Now for the sauce, and this is super-simple!!
Take a non-stick sauce pan, spray with spray oil - I used Olive Oil.
Spices - I added some fresh ground Sea Salt & Black Pepper to the pan, some Italian Spices (Penzey's Tuscan Sunset), and a crushed clove of Garlic. Spice it however you like!!
Rinse and toss into the pan some fresh Grape or Cherry Tomatoes, add some diced Onion, cook on Med-High heat.
Once Onion is translucent and Tomatoes have wrinkles crush the tomatoes (I used the back of my spoon), turn heat to low (simmer) and cover.
I let this simmer for about 5-10 minutes… then I decided I was too hungry to wait any longer…
This is what the sauce is like after simmering a bit…
That's it… now wasn't that simple!!

More Panclouds...
I hadn't had them in a while, so for breakfast this morning I decided to have some Panclouds (follow link to original recipe)… and of course, not being one to leave things alone…
I added some Saffron… I like Saffron...
Along with Bananas… my favorite to date...
And Strawberries… I hadn't tried Strawberries before...
Very Tasty!! I have to say that the Strawberry ones are a tie with the banana ones, and the Saffron was a nice touch… I'll have to have them again sometime soon!!

Tasty & Light Skillet Breakfast...
Scrambled eggs over skillet potatoes, with a side of tangerine sections...
This was my breakfast this morning, and for my WW friends that count points there's only 3 here…
I started out with a 4 oz red potato & microwaved it…
While that was microwaving I cooked up some diced onion in a pan sprayed lightly with olive oil, and added bacon salt for some extra flavor...
Cooked until the onions were translucent...
Cut up and added the potato, cooked a little more just to get the flavors blended well...
I had scrambled up 1/2 cup of Egg Beaters (equivalent of 2 eggs), I layered the eggs on top of the potatoes...
Seasoned my eggs with salt, pepper, tabasco (I like spice)...
Added some tangerine wedges for color & flavor & nutrients… and that was breakfast.
Fast, easy, flavorful, colorful, tasty, and satisfying…
