Healthy Fast Food… Fish!

Tonight we enjoyed another healthy & quickly prepared meal…

Oven turned on, set to 425F.

Started some Sweet Potatoes in the Microwave - we don't do these in an oven, it takes too long.

I prepped my quiche pan by spraying it with Olive Oil, rinsed a Steelhead filet and cut it in half, placed it in the pan.  Then I put some sliced onion on top, and sprinkled on some dry spice - tonight it was a fish spice from Williams Sonoma that had some red pepper in it (yum) and ended up tasting a bit smokey.

Threw the fish in the oven for 17 minutes… and dinner was ready.  I love to cook, but tomorrow is Easter & I'll be doing plenty then… so it was nice to do a simple meal tonight.
