Pumpkin Spice topped with cooked Pears & Bananas |
Ingredients:
2 cups cooked/mashed pumpkin
1 cup Egg Beaters
3/4 tsp salt
1 tsp baking soda
1 Tbl sugar
1 cup all-purpose flour
2 tsp cinnamon (suggest Penzeys Vietnamese)
1 tsp ginger
1/4 tsp cloves
1/4 tsp freshly grated nutmeg (or 1/2 tsp ground nutmeg)

Butternut Spice Pancakes (took Pumpkin recipe, changed to Butternut squash & modified spices)
Ingredients:
2 cups cooked/mashed butternut squash
1 cup Egg Beaters
3/4 tsp salt
1 tsp baking soda
1 Tbl sugar
1 cup all-purpose flour
2 tsp allspice

Sweet Potato & Oats topped with Banana and Sugar Free Syrup |
Ingredients:
2 cups cooked/mashed sweet potato
1 cup Egg Beaters
3/4 tsp salt
1 tsp baking soda
1 Tbl sugar
1 cup quick oats
2 cups cooked/mashed sweet potato
1 cup Egg Beaters
3/4 tsp salt
1 tsp baking soda
1 Tbl sugar
1 cup quick oats
2 tsp cinnamon (suggest Penzeys Vietnamese)
1 tsp ginger
1/4 tsp cloves
1/4 tsp freshly grated nutmeg (or 1/2 tsp ground nutmeg)(Cooking Directions at bottom)
All these recipes make 4 large or 12 small pancakes.
Cooking Directions (Pancakes):
Wisk all ingredients together in a bowl. Wipe/spray griddle/skillet with oil, put on Medium heat (large burner), wait until a drop of batter sizzles on the griddle. Unlike traditional pancakes you aren't likely to see many (if any) bubbles on these Pancakes, so use your judgement (if a pancake veteran) or peek (if a pancake novice) to see when its time to flip.
Toppings:
For the cooked pear & bananas (top photo) I diced up both, put them in a small non-stick saucepan, and cooked them until the fruits were well warmed.
For the cooked sliced pear (middle photo), I sliced up the pear & cooked it in my (very small) microwave for 1 1/2 minutes.
Have fun & play with toppings… use fresh or cooked fruit, syrup (there are some great sugar free options), powdered sugar, etc… use your imagination!!
