Sausage Spice Mix


This is my own custom blend of spices that I came up with for spicing ground chicken or when cooking portobello mushrooms. I used spiced ground chicken or portobellos in place of Italian Sausage in many of my favorite recipes, it cuts the calories way down & keeps the flavor.

Ingredients:
   1 part Coriander seed
   1 part Fennel Seed
   1 part Caraway Seed
   2 parts Whole Peppercorns
   3 parts Sea Salt
   3 parts Red Pepper Flakes
   2 parts Paprika
   1/2 part Garlic Powder

This can be ground with a Mortar & Pestle, but is easier to grind in a small electric coffee grinder (I use one that's old that I no longer use for coffee).
